Measure out your ingredients. Clean the strawberries and put them in a stock pot. Bring to the boil.
Add the gelling sugar to the stock pot and bring to the boil while stirring. Then reduce to a simmer and cook for 4 minutes. Encourage the strawberries to break down by gently smashing them with a wooden spoon.
Put the jam in a clean Mason Jar with a lid that seals. If you don’t like the seeds, strain the jam with a wire strainer.
Turn over the Mason Jar for 5 minutes to push out the air. Let the jam cool and store in the fridge. Use within 3 weeks.
